Recipe of the Week: Honey Roasted Carrots

I found this recipe on Pinterest, but the original blog post is found here.  Albert isn't really into vegetables, but he does like these carrots.  They have a great flavor are easy to make, you just have to think ahead a little bit because they are in the oven for awhile, which can be hard for me.


Ingredients:

  • 2 pounds of baby carrots 
  • Seasoning (I use Italian seasoning)
  • Olive Oil
  • 2 T Olive Oil
  • 3 T honey
  • 1 t balsamic vinegar


Directions:

  1. Roast carrots in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil.  
  2. Pull out of the oven and drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar.  
  3. Pop them back into the oven for about 5 more minutes.
