Recipe of the Week: Paula Deen's Basic Meat Loaf

Albert is a big fan of meat loaf and particularly loved this recipe by the great Paula Deen. It's much easier to make gluten free with the oats instead of bread crumbs and it's very moist.



  • 1 lb ground beef
  • 1 1/4 teaspoon salt 
  • 1/4 teaspoon ground black pepper 
  • 1/2 cup chopped onion 
  • 1/2 cup chopped bell pepper 
  • 1   egg, lightly beaten 
  • 8 ounces canned diced tomatoes (without juice)
  • 1/2 cup {gf} quick-cooking oats


  • 1/3 cup ketchup
  • 2 tablespoons brown sugar 
  • 1 tablespoon prepared mustard


  1. Preheat oven to 375 degrees F.
  2. Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.
  3. Topping: 
  4. Mix ingredients for topping and spread on loaf. Bake for 1 hour.
