Recipe of the Week: Italian Sausage & Peppers Over Rice

I found this recipe on Pinterest and Albert really liked it.  You can find the original recipe here on Christine's Pantry.  I didn't have garlic powder so I used garlic salt and it was really salty, so don't do that.

  • 1 pound Italian sausage, cut into 1/4 inch rounds
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon garlic powder
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup {gf} chicken broth
  • salt and pepper, to taste
  • 1 cup cooked rice

  1. In large skillet, heat oil over medium heat. 
  2. Add sausage and brown. In the same skillet, add onions, bell pepper, garlic powder, salt and pepper. Stir and saute about 6 to 8 minutes. 
  3. Add chicken broth, stir and cook another 2 to 3 minutes.
  4. Serve the sausage mix over cooked rice. Enjoy!
