Recipe of the Week: Italian Sausage & Peppers Over Rice
I found this recipe on Pinterest and Albert really liked it. You can find the original recipe here on Christine's Pantry. I didn't have garlic powder so I used garlic salt and it was really salty, so don't do that.
Ingredients:
- 1 pound Italian sausage, cut into 1/4 inch rounds
- 2 tablespoons extra virgin olive oil
- 1 tablespoon garlic powder
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1/2 cup {gf} chicken broth
- salt and pepper, to taste
- 1 cup cooked rice
Directions:
- In large skillet, heat oil over medium heat.
- Add sausage and brown. In the same skillet, add onions, bell pepper, garlic powder, salt and pepper. Stir and saute about 6 to 8 minutes.
- Add chicken broth, stir and cook another 2 to 3 minutes.
- Serve the sausage mix over cooked rice. Enjoy!
