Recipe of the Week: Pizza Casserole

I found this recipe on Pinterest, but the original post is on Cully's Kitchen.  This tasted like lasagna with pepperoni.  Albert especially like the pepperoni.  The pasta I made got a little too soft so next time I'll watch it especially close so it makes it to the pan al dente.  It was still very good.  Lots and lots of cheese! You can add whatever pizza ingredients you like.  I omitted the sausage and used turkey lunch meat instead of ham because that's what we had on hand.  


Ingredients:
  1. 1 lb {gluten free} short cut pasta
  2. 1 lb mild pork sausage (I omitted this}
  3. 1 large onion, medium size chopped
  4. 2 (26 ounce) jars pasta sauce 
  5. 1 lb cubed cooked ham (I used turkey)
  6. 1/2-1 lb of sliced pepperoni
  7. 3 (8 ounce) bags of shredded mozzarella cheese (this is A LOT of cheese, I used less)
  8. 6 tablespoons of grated parmesan cheese
  9. 2 tablespoons chopped garlic
  10. 1 teaspoon dried oregano

 
Directions:
  1. Cook pasta in boiling water until al denté.
  2. Cook sausage, garlic powder and oregano with onions until the juices run clear.
  3. Layer ingredients in the order listed below.
  4. 1st layer-1/3 of the pasta, 1/3 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, sausage and onions.
  5. 2nd layer-1/2 of the remaining pasta, 1/2 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, ham.
  6. 3rd layer-all remaining pasta, all remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, all the pepperoni (completely covering the entire top with pepperoni).
  7. Bake at 375°F for 40 minutes.
  8. Let sit for 5 minutes before serving.
