Recipe of the Week: Peanut Butter Chocolate Chip Oatmeal Cookies
Trader Joe's now has gluten-free rolled oats. They come in a 2 lb bag and are a lot cheaper than other gluten-free oats. On the back of the bag is a yummy oatmeal cookie recipe sans flour. You could make this with regular oats if you aren't gluten-free. This recipe makes about 30 cookies. They taste a little like granola bars and are great with milk. I used mini chocolate chips.
Ingredients:
- 1/4 cup butter
- 1 1/4 tsp baking soda
- 3/4 cup sugar
- 3 cups {gluten free} rolled oats
- 3/4 cup brown sugar
- 6 oz chocolate chips
- 2 eggs
- 1/2 cup chopped walnuts/sunflower seeds
- 1 tsp vanilla
- 1 cup peanut butter
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, combine sugar, brown sugar and butter and beat until creamy. Add eggs, vanilla and baking soda and mix well. Add peanut butter and mix. Stir in oats, chocolate chips and nuts.
- Place spoonful of dough on a lightly greased cookie sheet about 2 inches apart.
- Bake 10-12 minutes until lightly brown around the edges.
