Recipe of the Week: Marion's Pumpkin Heath Muffins

I was very lucky and won two Marion's Smart Delights Gluten-Free Cookie & Muffin mixes AND two Marion's Smart Delights Gluten-Free Lemon Bar mixes from Gluten Free Frenzy!  I highly recommend checking out all the great giveaways Gluten Free Frenzy! has coming for the holidays.



I decided to make muffins with my first mix using pumpkin instead of applesauce and Heath pieces instead of chocolate chips.  They really tasted more like cupcakes, but not as sweet, just the right amount. So good!  They were moist, not gritty or crumbly or spongy.  They did have a little baking powder aftertaste, but that sort of comes with the territory when eating gluten-free food and I didn't really notice it too much.  They didn't last long.
