Recipe of the Week: Honey-Glazed Salmon
In order to try and be a little healthier we tried this Honey-Glazed Salmon recipe. It was very fast and easy. We cooked it on our panini grill in the oven on broiler. This recipe calls for quite a bit of fish (our servings are 3 oz each) so we made 4 - 3 oz fish with half of the honey mixture. We ended up only eating 1 fish each so really this could serve 8 people. We give this 4 out of 5 stars.

Ingredients
- 2 tablespoons minced shallots
- 1 tablespoon chopped fresh or 1 teaspoon dried thyme
- 3 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 4 (6-ounce) salmon fillets (about 1 inch thick)
- Cooking spray
- Thyme sprigs (optional)
Directions
Combine first 6 ingredients in a small bowl. Brush honey mixture over skinless side of fish. Place fish on a grill rack or broiler pan coated with cooking spray, and cook 6 minutes on each side or until fish flakes easily when tested with a fork. Garnish with thyme sprigs, if desired.
