Recipe of the Week: Pork Scallopini
This meal was inspired by a few different recipes we found on-line. We pounded boneless pork chops and then breaded (with Jules GF flour) and fried it. We put that over gluten-free (quinoa is my favorite) spaghetti and topped that all with a red sauce I made with mushrooms and onions (you could make a sauce or get it out of the can). It was a tasty meal and a little healthier feeling than the white sauce we make with butter.
