Recipe of the Week: Cheeseburger Casserole

I really wanted to have some cheesy, hamburger, pasta, but wasn't sure how to go about it since generally you would use a condensed soup of some kind and they all have wheat in them. I do have Bear Creek Cheddar Broccoli soup which is wheat-free and has an optional recipe to make cheese sauce on the back. You just add a cup less of water when making it. So this is what I did:

Ingredients: 
  • 1 lb of hamburger
  • 1/2 pkg of Bear Creek Cheddar Broccoli Soup
  • 500 grams of short pasta of your choice
  • opt. mushrooms

Directions:

Boil the pasta to al dente, brown the meat, and make the soup using the cheese sauce directions.  Add them all together and voila!  You can  add salt and pepper as you like.  We didn't add mushrooms, but both of us though that it would taste better with them.


It turned out just like I hoped it would.  Sometimes you just need comfort food and this really hit the spot.  A great alternative for those who can't eat the traditional hamburger helper.

Two months ago I was diagnosed with Celiac Disease after 10 years of suffering and trying to figure out what was wrong. It has been so hard to give up my favourite breads, pastas, and pizzas. I still haven't found a bread that I enjoy, but I'm learning to cook things that are gluten-free.
