Anniversary Celebrations

For our 2nd anniversary we decided that instead of going to Ruth's Chris, we would have steak at home. Albert picked up some flowers on our way home from work. I didn't mention it to him, but I had secretly been hoping for some. We had to document the event so I can have some pretty flowers to look at during the year.
 

The meal turned out pretty good. Albert made the steak and mashed potatoes and I was put in charge of the asparagus. I found this really simple recipe that always turns out perfectly. In previous attempts at making asparagus, I over cooked them and they were almost inedible. We even broke out the sparkling cider and the table cloth we used at our reception.  Fanciness I know :)
 
Asparagus Recipe
Preparation time: 10 minutes.
 
Ingredients 
  • 1 bunch of medium sized asparagus, about 1 lb
  • 2 Tbsp of the most exquisite extra virgin olive oil
  • 2 Tbsp freshly grated Parmesan cheese
  • Salt and freshly ground black pepper
Method 
  1. Prepare the asparagus by rinsing them thoroughly, break off any tough, white bottoms and discard. Cut into 1 to 2 inch sections, slicing the asparagus at a slight diagonal.Fill a medium sized saucepan half way with water, bring to a boil. Add the asparagus and reduce heat slightly to a simmer. Parboil the asparagus for exactly 2 minutes. Drain the hot water. While the asparagus are still hot, toss them in a bowl with the olive oil, and Parmesan. Salt and pepper to taste. Serve warm or room temperature.
  2. Note that when you are working with so few ingredients, it's important to make sure they are of the highest quality.
