Recipe of the Week: Ricotta Pudding

This Ricotta Pudding was another recipe from Mama D's Homestyle Italian Cookbook. I found a recipe for cannoli pudding that is identical except Mama D added 1/4 t of cinnamon. 

I love ricotta and this dessert was ok. It had an interesting mix of the smooth cheese mixed with the chucky nuts, cherries, and chocolate chips. It was fun to try something different and it was good...not great though. It was easy to make, but the ingredients are kind of expensive (maraschino cherries, pecans, ricotta cheese).  I'd give it 2 out of 5 stars.
