Recipe of the Week: Bacon Wrapped Chicken with Laughing Cow Cheese

This was an experiment that Albert conducted. It turned out VERY well. We both love this and have had many repeats. Yum!
 
The salad is from Mama D.  It's just pears, lettuce, and walnuts with olive oil and lemon juice.  It's good. I'm a horrible salad maker so it's  nice to  have easy ideas of how to  make a good one.


Albert's Bacon Wrapped Chicken
Serves 2

Ingredients: 
  • 2 Laughing Cow Garlic & Herb Light Cheese slices
  • 4 chicken tenderloins
  • 4 slices of bacon
  • salt & pepper

Directions: 
  1. Flatten the chicken tenderloins.
  2. Lightly grill the 4 thin chicken tenderloins on one side.
  3. Put one slice of cheese in between two thin chicken tenderloins with the grilled sides in the middle and add salt & pepper.  Like a sandwich.
  4. Wrap un-cooked bacon around the chicken sandwiches.
  5. Grill for about 5 minutes on each side until chicken is no longer pink.
 
 
I give this 5 stars out of 5. If you aren't a vegetarian, I'd highly recommend giving it a try.
