Recipe of the Week: Fried Flounder & Fries

Albert made this gluten-free version of fish & chips with Jules GF flour. We mostly used this recipe from All Recipes, but also borrowed some gems from this recipe from the Food Network. We made 3 flounder fillets with one serving of the All Recipes recipe.

Albert mixed together the following:
  • 1/4 cup {Jules GF} flour
  • 1/4 t baking powder
  • 1/4 t salt
  • 1/4 t black pepper
  • dash of Old Bay Seasoning
He then stirred in:
  • 1/4 cup skim milk
  • 1 T egg beater
When it was smooth, he put it in the fridge for 20+ minutes. He drudged the flounder through corn starch and then put it into 350 degree vegetable oil. We found out how important it was to keep the oil at 350 degrees because it kept getting too hot so then we'd turn it down and it was too cold. The oil was a little out of control so we used our splash guard which really helped.

This was pretty tasty. Not healthy, but sometimes you just need something fried, thus we added in the spinach :D We'd make this again.
