Recipe of the Week: Eggplant & Eggs

We had some left over eggplant we needed to use up so Albert offered to make a dish his mom used to make when he was a kid.


For both of us, he used 4 eggs and about 2 cups of diced eggplant with salt and pepper. We ate it with a little ketchup and served it with rice.

He fried the eggplant in a frying pan until it was soft and then added the beaten eggs and scrambled them with the eggplant. It was really quite tasty. I give it 4 out of 5 stars.
