Recipe of the Week: Dijon-Crusted Tilapia

Dijon-Crusted Tilapia is one of our favorite meals, although we don't make it as much as we did in the past.  It always turns out well and it's nice to have when we have people over.  We made it for our family the week we were married and Albert's mom still talks about how good it was and recently asked for the recipe. It's that good :)

We follow this recipe here except we substitute the bread crumbs for gluten-free ones Albert makes from Pamela's gf bread and we leave out the horseradish.  It goes great with rice and green beans.  I give it 4 1/2 stars out of 5. 

SERVES 4
Ingredients 
  • 3 tablespoons reduced-fat mayonnaise
  • 2 tablespoons parmesan cheese, shredded, divided
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon horseradish (opt)
  • 4 tilapia fillets
  • 1/4 cup dry {gluten-free} breadcrumbs
  • 2 teaspoons butter, melted

 Directions

  1. In a small bowl, combine the mayonnaise, 1 tablespoon parmesan cheese, lemon juice, mustard and horseradish.
  2. Place fillets on a baking sheet coated with nonstick cooking spray. Spread mayonnaise mixture evenly over the fillets.
  3. In a small bowl, combine the bread crumbs, butter and remaining parmesan cheese; sprinkle over fillets.
  4. Bake at 425 degrees for 13-18 minutes or until fish flakes easily with a fork.
