Recipe of the Week: Tomato Soup with Crab

This soup was inspired by our trip to Ruth's Chris during the last Restaurant Week. Albert ordered it and since it was so simple -- tomato soup & crab we figured we could duplicate it. I was a little sceptical, but it is really good and we love paring it with cheese quesadillas with hot sauce.

Normal condensed soup has wheat in it so we use Trader Joe's Organic Tomato Soup and we add fresh basil, which is so so good. We used one can of crab for the two of us that we sauteed with butter flavor spray. I used Fat Free Kraft Cheddar for my quesadilla and corn tortillas.



We give this meal 4 1/2 stars out of 5. It's definitely one of our favorites plus it's super low calorie. We usually have two bowls of soup each since it's only 100 calories per cup.
