Recipe of the Week: Chicken Adobo

One of our favorite Filipino dishes is Chicken Adobo. Albert has started making this in the crock pot and we are working on finding the perfect cook time. Because it's chicken it tends to dry out if we leave it in too long, but it is always and tender and tasty.

This is Albert's recipe he used by combining are recipe in our Filipino cookbook and a recipe on-line:


Ingredients
  • 340 grams Chicken, Breast
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon garlic
  • 1 tablespoon {gluten-free} soy sauce
  • 1 tablespoon olive oil

Directions

Put all of the ingredients in the crock pot and cook on low for about 3 hrs (check to make sure it doesn't over cook). Serve with rice.




Green Beans:

We make these green beans multiple times a week. I sautee the onions first and then add frozen French cut green beans, frozen mixed peppers, fresh mushrooms, and grape tomatoes. Then I add a couple tablespoons of Balsamic vinegar and garlic salt to taste. Yum!

We give the non-dry version of this chicken 4 stars out of 5 and eat it on a regular basis :D
