Recipe of the Week: Zesty Tilapia with Mushrooms

Tonight we tried out a new tilapia recipe. We used this recipe on allrecipes.com and altered it a bit since we didn't have the exact ingredients.

Here's our very slightly altered recipe:

Zesty Tilapia with Mushrooms
Serves 2

Ingredients

  • 4 ounce mushrooms
  • 1 tablespoons margarine
  • 8 ounce tilapia
  • 3 tablespoon lemon juice
  • 1 small onion
  • salt and pepper to taste
Directions
  1. Sautee onion and mushrooms in cooking spray. Add 1 tablespoon lemon juice and salt & pepper.
  2. Melt 1 tablespoon butter in a medium skillet over medium heat. Place tilapia in the skillet, and season with kosher salt and pepper. Pour the lemon juice over the tilapia, and cook 5 minutes.
  3. Flip the tilapia, and season with kosher salt and pepper. Add onions and mushrooms into the skillet. Continue cooking 5 minutes, or until fish is easily flaked with a fork.


The results:

We give it 4 1/2 out of 5 stars and will be making it again :D We might try some white cooking wine with the lemon juice to add more flavor. We usually bake our fish, but I liked the way it turned out pan fried. Very flakey and juicy.
