Recipe of the Week: Rice Tortilla Pizza

I got this idea from this recipe.  I usually get rice tortillas from Trader Joes, but they aren't very good for much because they are so tough and chewy. This recipe is great because the sauce makes them soft and they work perfectly as ultra-thin pizza crusts.  I either make them on the stove in a pan like a quesadilla or I put on pasta sauce, cheese, and toppings and then pop them in the toaster oven which also works nicely.  It's a great, fast lunch.
